Banana Bread Cookies With Cranberries & Chocolate
Before we get to the delicious Chocolate, Cranberry, Banana Bread Cookie recipe – let’s talk about weather. Shall we?
Wyoming actually has been {dare I say} tolerable this summer.
Most Wyoming houses don’t have AC {including ours} and I’m starting to realize why. The last few summers that we have lived here, have been brutal w/the heat and they said that was abnormal. {winters were mild too} But this past year, it seemed to snow A LOT and rather late into the season.
My guess is that all the snow we had this past winter, made for a mild summer? Maybe I shouldn’t have complained about “what seemed like” the never ending snow……
And complete shocker – the past few nights we have had only a window fan going and I’ve been sleeping w/a thick blanket. I know – crazy right??? Because of this, I have a feeling fall is going to be knocking on our footsteps soon.
But I honestly can’t complain. I absolutely LOVE fall and everything that it entails. {I’m ready for pumpkin EVERYTHING!} If I had it my way – we would live in an area that had fall-like weather all year long. {Boots & cardigans all year long? A girl can dream!} The optimistic side of me really wants fall to creep up soon, so we CAN actually enjoy it a bit longer, before the winter weather hits in October again….
So enough weather rambling from me {if you are melting away this summer – I don’t envy you} If you are wondering what the weather has to do w/today’s post – well, this banana bread cookies recipe happens to be one of my FAVORITE things to bake during the fall.
It’s a crowd pleaser and it’s super easy. And since we ALWAYS seem to have bananas on hand – I’m rarely scrambling to find all the ingredients in my pantry.
I like to make a big batch and freeze them for later. This recipe is essentially spruced up banana bread but in a smaller form {or for me it’s portion control from eating the whole loaf!}
You can easily take the cranberries out, but I like them for the added taste/texture and they remind me more of fall!
