Hi friends. It’s Stacey from Glued To My Crafts and I’m taking a slight “detour” from our regular programming to share this Easy & Delicious Honey Mustard Bean Salad Recipe!!!
Let me tell you some backstory.
I’m a crafter…not a baker or a cook {although sometimes I like to pretend!} So when I get invited to anything “party related” and am requested to bring something to share, I cringe.
I’m personally ok with cooking and baking stuff for my husband & son to enjoy because if they hate or it’s just not up to par – that’s nice! Oh well! Maybe next time!
Does that sound mean?
But in all seriousness, I hate the pressure {that I put on myself} to bring that perfect dish everyone at the event will love.
So fast forward – spouse Christmas party last week for my husband’s work. At the General’s house. Can we say pressure? These attendees are people I “normally” don’t see and I kinda look up to them. With that being said, it’s a small military world and I don’t want to be “that girl” who is remembered for the wrong reason this holiday season. Yes..I’m probably being over dramatic {I know I am, but hence the pressure I put on myself in the first place about bringing a meal} but you just never know these days!!
Fast forward some more. The invite says “bring your favorite appetizer to share.” Of course – here is where I start panicking. Crap. Opens Pinterest and searches for “the best appetizer recipe.”
The first thing that comes up is this The Best Bean Salad post. I skimmed over it quickly and decided, this is fate, here we go! And after a quick trip to Walmart, the recipe came together with ease and you better believe – it was nearly ALL gone at the end of the event too & no complaints {that I know of!} I say success and here I am passing it on!
And when I say it was super easy to make – I mean it! It was just matter of opening some cans and thanking the Kraft Gods for their delicious pre-made honey mustard dressing. It seriously could have NOT been easier. Check it out below!
Honey Mustard Bean Salad Ingredients:
- 1 Bag Corn, frozen
- 1 Red Bell Pepper, chopped
- 1 Small Sweet Red Onion
- 1 Large Cucumber, chopped
- 1 Can Black Beans, drained & rinsed
- 1 Can Garbanzo Beans, drained & rinsed
- 1 Can Red Kidney Beans, drained & rinsed
- 1/2 to 1 whole bottle of Kraft Honey Mustard Dressing
- Tortilla Chips for serving
Directions:
- Be sure to drain/rinse off all your canned beans. Then throw them into a large mixing bowl.
- Chop/dice up your red bell pepper, red onion and cucumber. Throw it all into the bowl.
- Throw the frozen corn into the mixing bowl.
- Open the honey dressing and pour about half into the mixing bowl. Mix your ingredients, until well covered.
- Take a clean spoon and taste the bean salad to see if you need more dressing {I was good with half the body but some might like it more drenched.}
- Cover your bowl with plastic wrap and let it sit in the fridge for about two hours to marinate.
- Then mix again with your serving spoon and to serve as is or with tortilla chips. Enjoy!
