Black Bean Salsa {Recipe}
Ingredients:
* 1 can {each} black beans, kidney, pinto, chickpeas {rinsed & drained}
* 1 can corn {drained}
* 1 chopped red & green bell pepper
* 1 chopped small red onion
* 2 cloves of garlic, chopped
* 1 cup chopped cilantro
* 1 can of chopped green chiles
* 1/4 cup olive oil
* 3/4 cup apple cider vinegar
* 1/3 cup sugar
Directions:
* In a large mixing bowl, combine your beans, corn, chopped bell pepper, onions, garlic, green chiles and cilantro. Set aside.
* In a small saucepan, mix together your olive oil, apple cider vinegar and sugar. Bring to a boil. Remove from heat and let it cool completely.
* Add marinade to your bean mixture and mix until everything is well coated.
* Cover and place in fridge for a few hours {or overnight} to allow the juices to really soak in. Then enjoy with your favorite corn chips or in a salad.
