You know what I love these days? Homemade Blueberry Muffins!
Whether for a quick breakfast, a snack or late night dessert – I can’t get enough of them {Neither can my family because we ate one whole batch in less than a week}
Blueberry Muffins have always been my personal favorite to eat and I don’t even need them to be topped with fancy things – they are just PLAIN ole good!
So if you haven’t guess yet, today I’m sharing a SUPER easy recipe for homemade Blueberry Muffins.
The ingredients are straight forward and simple, while the recipe is super basic. You can even get the kids involved in the making – which makes for a great family afternoon spent together. And did I mention they are great to freeze? They are also fun for school lunches and large gatherings!
Now go! Go make this Blueberry Muffin recipe because CLEARLY it’s going to be a family favorite. Just be sure to put one {or five} muffins aside for yourself, because they will go fast!
Easy Blueberry Muffins
{Makes 24 muffins}
Ingredients:
* 2 cups flour
* 1/2 cup sugar
* 1/2 cup brown sugar
* 1 tbsp baking powder
* 1/4 teaspoon salt
* 1 large egg
* 1/2 stick butter, melted & cooled
* 1 cup milk
* 1 cup fresh blueberries
Directions:
* Preheat oven to 400f degrees. Line your muffin tin with muffin cups.
* In a large mixing bowl – beat together your egg, butter, sugar, brown sugar and milk. Add in flour, salt & baking powder until well combined.
* Fold in your fresh blueberries.
* Fill your muffin cups until they are 3/4 full.
* Bake muffins at 400f for 20 minutes or until a toothpick comes out clean.
