This “Faux Chickpea Cookie Dough Dip” recipe was originally found in the April 2014 issue of Family Fun magazine.
It’s made with canned chickpeas instead of flour and of course, lacks the raw eggs like the real stuff.
At first when I saw the recipe I thought “WHAT!?!” Gross! But after looking over the simple ingredients {that I just so happened to have on hand} I figured why not give it a try?
It’s not quite the same as the “bad for you” raw cookie dough stuff but it surprisingly does taste pretty good. I served our dip up with some fresh apple slices and my picky eater son actually ate it right along side me {by the spoon full – I might add!}
For sure, I’ll be making it again in the near future. Specially when those “guilty” late night snack attacks happen!
Anyways – I wanted to share the faux cookie dough dip recipe with you all today, in case you wanted to give it a try as well! Find all the ingredients and directions below!
Faux Chickpea Cookie Dough Dip
Ingredients:
1 can of chickpeas, drained
6 tablespoons brown sugar
1/4 cup peanut butter
3 tablespoons instant, uncooked oats
1 tablespoon milk
2 teaspoons vanilla extract
1/8 teaspoon salt
1/8 teaspoon baking soda
1/3 cup milk chocolate chips
Directions:
* In a food process, throw together all ingredients listed together BUT the chocolate chips.
* Blend everything together, until smooth and well combined.
* Next up – fold in your chocolate chips in to the mixture.
* Transfer to another dish.
* Serve with fresh fruit.
* Refrigerate leftovers {no more than a day, I say!}
