Applesauce Cranberry Bread Recipe

Since I’m working on my personal goal of 30 days of thanks this fall season, I recently decided that any baking I do this month, will be passed on to someone else.
Recently I made this delicious cranberry bread with applesauce and hand delivered the loaves to the cops at the base gate. I’m guessing by the huge smile on the receiving guy’s face, I pretty much made their day. Which in turn, totally made my day as well. It was a win win for everyone.

PAIR YOUR DELICIOUS BREAD WITH —> Homemade Pumpkin Bread Recipe For The Fall



The Bread Ingredients:
- 2 1/2 cups all purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup vegetable oil
- 2 large eggs, beaten
- 1 cup unsweetened applesauce
- 3/4 cup dried cranberries or 2 cups of fresh cranberries, chopped
Directions:
- Preheat oven to 350 degrees.
- Grease a 9×5 inch loaf pan.
- Combine flour, sugar, baking soda, cinnamon, baking powder and salt in a large bowl; mix well together.
- Combine oil and eggs in another medium bowl.
- Stir in applesauce with your spoon.
- When done combining everything, add applesauce mixture to the flour mixture.
- Stir well until all is combined and smooth.
- Fold in cranberries.
- When ready, pour batter into prepared pan.
- Bake bread until a toothpick inserted in center comes out clean. This can take about 55-65 minutes.
- When done baking, cool in pan on a wire rack for about 10 minutes.
- Remove the finished applesauce cranberry bread from pan and place on wire rack; cool completely.
- Then slice with a bread knife, serve and enjoy the YUMS that come out of the lucky receivers mouths!!!

Make It Your Own Today – If you use fresh cranberries in your applesauce cranberry bread, the loaves might be a bit tart for some people. You can easily substitute with half dried cranberries and then half fresh cranberries instead, for a different flavor profile! YUM!

I had the same problem…I used metal pans…the center was still wettish….I cooked it for 70 minutes…have you made it again?

What pan are you using?
You could also try to lower the temperature and cook a tad longer. Also covering with foil could help too
(I make bread 3-5 times a week)

What is the secret for baking loafs, banana, cranberry, etc. and not having burned sides and bottom?
I have tried everything, the rest of the loaf is fine but to get the middle baked is a problem. Any advice?
