Ham & Mac Casserole


HAM & MAC CASSEROLE
I'm all about easy. Especially when it comes to dinner time around here. The easier the better, but it has to taste good. That is the golden rule. And oh, affordable too. So I have to say, this recipe is EASY, TASTES GOOD & is AFFORDABLE. Why wouldn't you make this for your family? And not to mention, one pan for clean-up and you can freeze the leftovers. This is great for nights where you don't feel like cooking anything and ingredients can be easily substituted , for what you have on hand.
1 cup dried elbow macaroni
1 1/3 cup milk
1 10.75 ounce can of condensed mushroom soup (can substitute with any of the condensed soups)
2 cups of diced cooked ham
2 cups of diced red bell pepper (can be substituted with any vegetable you like)
3/4 cup shredded cheddar cheese
1 4 ounce can of sliced mushrooms
1/2 cup of chopped onion

1. Preheat oven to 375. Now this is where I say one dish to clean. I combine milk and soup in my casserole dish. Then I stir in my ham & noodles, 1/2 cup cheese, the mushrooms, bell peppers and onions. Stirring it all, until it's well combined. Cover with foil. Place in oven.
2. Bake, covered, for about 1 hour. Once your hour is up, uncover and stir. Sprinkle with remaining 1/4 cheese and bake for another ten minutes or until cheese is melted. Serve and enjoy!

I love these kind of meals because it's sorta like comfort food too and you don't have to made anything else to go with it. It's really creamy and my child (the picky one) actually ate it too. I hope you enjoy it!
